Serves 6-8Preparation time: 15 minutesCooking time: 40 minutes in total2 conference pears2-3 tbsp squeezy honeySaltCoarse ground black pepper2 tbsp olive oil250g Danish blue cheese,crushed with a fork3 egg yolksDash port50g walnuts, finely chopped6 slices breadMethod1. Pre-heat the oven to 190°C, gas mark 5.2. Slice the pears in half lengthways, and then scoop out the core with a teaspoon.3. Cut a sliver off the bottom of the pear, so they sit nicely.4. Drizzle over the honey and oil, and then sprinkle with salt and pepper.5. Place the pears into the pre-heated oven and cook until browned and well shrivelled, then cool.6. Pre-heat the grill.7. Beat the cheese, eggs, port, pepper and walnuts together well.8. When ready to serve, toast the bread on one side only.9. Then evenly spread the cheese mix onto the uncooked side of the toast,spreading right to the edges.10. Place on a baking tray and cook under a medium grill until well glazed.11.
