Serves 4 peoplePreparation time: 20 minutesCooking time: 15-20 minutes4 tbsp olive oil1 medium onion, peeled andchopped into 2cm chunks2 medium potatoes, peeled,2cm cubes and cooked5 small carrots, peeled,cooked and cut into small pieces½ medium cauliflower brokeninto florets, then cooked1 chicken stock cube100ml watercoarse ground black pepper140g rocket2 small apples2 tbsp olive oilChicken en Croute with GreenPeppers and MustardMethod1. Heat the olive oil in a large nonstick frying pan.2. Add the onions and cook for a few minutes to brown slightly.3. Next add the potatoes, carrots and cauliflower and continue tocook until they all take a little colour.4. Next, add the crumbled stock cube, water and a generous dash of pepper.5. Stir well and cook over a high heat, so the stock cube dissolves and the water reduces slightly, this will make the dish nice and moist, but not wet.6. Check the seasoning, adjust if needed.7. Cook the Chicken en Croute as per the pack instructions.8. Then place the rocket into a large bowl, grate the apple on a coarse grater and add to the rocket, mix well, but lightly.9.
