Lamb and chocolate? It's mint to be!

With growing interest in the chocolate savoury trend, discount supermarket Aldi has teamed up with chef Ian Haste to create an innovative new recipe that is sure to excite both adults and children alike this Easter. A decadent dark chocolate sauce with a hint of mint makes for the surprisingly perfect accompaniment to a traditional Easter lamb roast.
 
Using chocolate to add a depth of flavour to savoury dishes is a trend that continues to rise and Aldi’s creation will give customers an interesting twist on the much loved mint sauce and roast lamb combination.  Families can also make use of leftover Easter eggs to make the delectable sauce from the comfort of their own home.

Recipe - Dark Chocolate and Mint sauce
 
Ingredients
  • 50g Greenvale Butter
  • 1 x Ashfield Farm Whole Leg of Fresh British Lamb (to produce the dirty pan to deglaze)
  • 1 x Large bunch of A Hint of…Mint
  • 300ml Quixo Chicken Stock Pots
  • 1 x Glass Exquisite Argentinian Malbec (https://www.aldi.co.uk/exquisite-argentinian-malbec/p/053820004800400)
  • 8 x Large pinch Stonemill sea salt
  • 70g (70%) Choceur Dark Chocolate
 
Method
·         Add the meat to a hot pan to add colour, add the butter and baste the meat until the pan has a glazed flavour and colour
·         Take out the meat and add the red wine to the pan along with a good pinch of salt and chocolate
·         Drop the heat and let the chocolate melt, add the 300g chicken stock and turn the heat up until the sauce starts to bubble and reduce
·         Once the sauce starts to thicken, add the finely chopped mint and stir
·         Let the sauce reduce by around half or until the sauce looks thick and glossy
·         Serve drizzled over the cooked (medium) lamb

Lamb:
Chocolate is a key element of Easter and its part in this original sauce recipe compliments the savoury flavours of the lamb. When paired with Aldi’s Whole Leg of Fresh British Lamb (2.1-2.8kg) or Specially Selected Easy Carve Stuffed Lamb Leg (1.2-2kg), the dark chocolate mint sauce enriches the taste of the meat, creating a mouth-watering aroma.
