Veggie Bean Burgers (makes 4) | Half a courgette Half a carrot Baked beans Onion Burger rolls Half a bag of salad | Begin by grating the carrot, courgette and onion. Bean & Veg Loaded Jackets | 1 courgette 1 carrot 1 onion Tin of chopped tomatoes Tin of beans Potatoes Half a bag of salad | Grate the courgette, carrot and onion, and cook them until softened. Add half a tin of chopped tomatoes and half a tin of beans. Cook for an additional five minutes, then fill the mixture into jacket potatoes and serve with a side of salad. |
