This pavlova dessert is filled with fresh cream and topped with a decedent tower of fresh bright berries, making it the perfect dish to round off Sunday lunch – you’ll be sure not to leave a berry in sight!

Aldi’s Mini Pavlovas with Yoghurt and Berries

Ingredients

4 x Medium Egg Whites

215g Caster Sugar

200ml Greek Yoghurt

250g Fresh Mixed Berries – Raspberries, Blueberries and Strawberries

Method

Preheat the oven to 130°c/250°f/gas ½

In a clean glass bowl whisk the eggs whites using an electric beater till the meringue has formed soft peaks

A teaspoon at a time add the caster sugar beating well between each spoonful, this takes time – but don’t rush as you want the sugar to be well mixed

The meringue will be thick and glossy when finished

Line a couple of baking trays with some non-stick baking parchment

Use a tablespoon to spoon the mixture onto the baking sheets and swirl to make a hollow for the yoghurt and berries

Bake in the oven for 60 mins

Allow to cool in the oven with the door slightly open

Once cooled take off the baking paper

Spoon yoghurt in the hollows and top with berries

Aldi’s Forest Berry Bake Recipe

Ingredients

500g Four Seasons Black Forest Fruits

120g Grandessa Strawberry Jam

 50ml Water

20ml Lemon Juice

1 Holly Lane Madeira cake, crumbled

70g Greenvale Unsalted Butter, softened

Method

Pre-heat the oven to 190°C/375°F/Gas Mark 5.

Tip the frozen fruit into the baking dish.

Put the strawberry jam, water and lemon juice into a small saucepan and cook on a low heat until the jam has melted, then pour over the fruits.

Mix the melted butter with the cake crumbs and sprinkle over the fruits.

Bake in the oven for 20 minutes until golden brown.

Serve with ice cream or whipped double cream.
